How to Make Palak Saag : The Traditional Way

- 3–4 cups palak (spinach), washed and chopped
- 1 tbsp cold-pressed sesame oil or ghee
- 1 tsp jeera (cumin seeds)
- ½ tsp grated fresh ginger
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ¼ tsp jeera powder
- Salt to taste
- Water as needed for desired consistency

- 1 small boiled and mashed potato (for body and texture)
- 1 green chilli or a pinch of pepper powder, if mild heat is preferred

- Blanch chopped palak in hot water for 2–3 minutes. Drain and blend to a coarse paste (or finely chop for a rustic texture).
- In a pan, heat ghee or oil. Add jeera and let it splutter.
- Add grated ginger and sauté for a few seconds.
- Add turmeric, coriander powder, jeera powder, and mix.
- Add palak puree and salt. Stir and cook on low heat for 5–6 minutes.
- (Optional) Mix in mashed potato for a thicker consistency.
- Simmer for another 2 minutes. Adjust water if needed for a semi-gravy consistency.
